I found this bowl at Target the other day for $5. It immediately screamed oatmeal to me, so I made the financial sacrifice and purchased it. I love the cracked red paint on the inside.

A Little Shocked...

Is it dry in here?
So today I decided to make muffins. I also decided to share them with you. These muffins were "inspired" by this recipe. Instead of cranberries, I used dried unsweetened Bing cherries and instead of pistachios I used chopped pecans. Oh yea, and instead of a moist muffin, I unknowingly opted for dry and crumbly.

Angel's Food Update
Hey Guys-
Sorry about being M.I.A. for awhile. I've been taking a little break from the food blogging thing. I'm still reading everyone's and loving every minute of it. I've been brainstorming ways to make Angel's Food better, and most of all different. I'm desperately trying to balance a healthy lifestyle and the demands of just plain life. OMG Where have you been?!
I know, I know...You're asking yourself, where has Allyson been?? I've been here, everyday, just not blogging :( Life is just quite busy. I'm not here to make excuses though. I'm here to share the things that I eat!
After that horrible bout of "sickness" last weekend, I started this past one with a sore throat. Roar, I'll say it again, I am not a good sick person. I thought I pretty much had it beat, but today the runny nose and sinus pressure knocked me over the side of the head. Damn, this sucks. I started dinner with this:I've read good things about it, so I'm waiting for it to do its magic. Its and Emergen-C!! (sorry, had to go there).
I'm going to back up a bit and recap some of the things I've been putting in my mouth the past week.
Tri-Colored cookie. These are my favorite cookie in the whole wide world. Especially from DiFilippi's Bakery upstate. The are the most amazing thing I've ever tasted. I'd live off of them if I could. Seriously.
Tomato, avocado and shredded Mexican cheese on Ezekiel bread with some hot sauce. Yum. I melted the cheese a little before I ate it. Delicious combo. Quite filling too. Oh yea, there was an orange too.
Same type of deal minus the bread plus left over polenta. I liked this even better than the sandwich. It was a great combo of flavors and textures. Can't go wrong with avocado and cheese.
Aaaaaaaand another orange. These weren't the best I've ever had, kind of hard to peel and eat. Too much work for me.
The awesome people at Ile de France sent me some goat cheese! I got it last week and couldn't wait to try it!
2 cloves of fresh garlic minced
1/2 half red onion
2/3 bag of baby spinach
2 tbs EV olive oil
Crumbled Ile de France Goat Cheese (as little or as much as you like-I used about 1/3 the log)
Saute the garlic, onion and 1 tbs of olive oil until translucent (big bad cooking word!) and then added the spinach and cooked until wilted.
Brush the remaining tbs of EVOO on the dough (alread floured and streched on the baking sheet) and then simply spread the spinach mixture evenly across the dough.
Then add the crumbled goat cheese. Bake at 425 for about 13-15 minutes.
I made some trips to Whole Foods, Trader Joe's and Mrs. Green's this weekend and picked up a few things along the way:
Rob and I found some low fat ice cream that I'm about try. I have to make sure its good. It might take several tries. Its all about doing my part...

Goodmorning Revival
It was an early morning at the gym today. I was still not feeling 100% when I got up, but I decided afterward to just push through it and try to sweat all the icky feelings out. I still took it easy though. 35 min elliptical program and a 1 mile run/walk and a few ab moves. The run/walk was more walking fast on an incline than a run. Usually its the other way around. I did download some new music this weekend. I was excited to listen! Breakfast was the usual ;)
I'm starting to wonder how much of me is still sick or how much is just in my head. One minute I'm fine (i.e...when I'm talking and interacting with others) and the next my head and whole body is "icky" (i.e...when I'm alone and thinking too much). I still hate feeling like this.
Almuerzo
It may not be very pretty, but my lunch was a delicious repeat from last night's dinner. with a spicy chunky tomato sauce topped with some PolentaParmesan cheese. I finished about 95% of it. I think it was even better today. The polenta had a chance to firm up for longer and it soaked up all the tomato sauce...YUM!! :)**After lunch I had an orange and some olive hummus with about 6-7 crackers (Triscuits & Kashis) for a small snack when I got home from work- each not pictured**

Dinner was leftover Mexican lasagna and yellow rice with olives. Rob and I made it on Saturday night when I was starting to feel a little bit better. This is another dish that just gets better as leftovers. I could've eaten way more than this, but I stopped myself (this time!)
Even though I wasn't feeling the greatest this weekend, I did do a lot of studying for my classes. I've got my first exam this Wednesday! I've completely taken over the dining room table! Its like my mini office. I like to be able to spread out.
