This is gonna be a quick post. I'm getting ready to run out the door! Sorry the pictures are all weird, I've been playing with the formatting!
I was so mad when I woke up and realized it was Monday! Grr...I always wish for it to be Sunday again-but for some reason it never happens! So, somewhat unwillingly, I got up and did the whole getting ready for work thing and had the typical breakfast.
Work today went by pretty fast and I was back home before I knew it. I planned on going to the gym in the afternoon today and that's exactly what I did. I miraculously was able to come home and not park myself on the couch. I changed right away and headed over. Its always so tempting to just sit and relax once I get home, so its kinda a big deal when I'm able to rally.
This may have been a mistake, but I did the Magic Multitasker at the gym again today. My back is starting to feel a little sore already! I took some Ibuprofen and sat on a heating blanket for the rest of the afternoon, hopefully it'll be ok tomorrow! Also at the gym I did: 11 Min StairMaster, Various arms, abs and a 35 Min elliptical program. Before the gym I ate a half of a Luna Bar.
For lunch I ate other thing I got from Mrs. Green's the other day: A portobello mushroom burger....Yum! I can't remember all the ingredients but I believe it had: Portobello mushroom (duh), quinoa, zucchini, maybe some onion, among others. I added a little shredded cheddar cheese and dipped it in some A1 Steak Sauce. I love that stuff so much, I used to put it on eggs!
I also had a Pluot with lunch. I read that they're also called Dinosaur Eggs. Love it. It was def more like a plum than an apricot, but delicious none the less.
Rob has a playoff game for his softball team tonight, so I was on my own for dinner. You know what that means! Allyson can make something that Rob would deem as poison. I decided on Eggplant. I had one in my fridge that probably wouldn't have lasted too much longer and I wanted to do something with it. I made a version of Eggplant Parm.
I breaded the eggplant and then baked it at 375 for about 25 minutes. I topped it with my tomato, mushroom and spinach mixture from the other day that was also due to go. I sprinkled parm cheese on everything. It was sooo good you guys! I loved that I saved on fat and calories by not frying the eggplant. It still came out crispy on the outside and chewy on the inside. Yum...this will definitely make another appearance.
I'm off to watch Rob play softball! Wish him (and his team) luck!!

I've only made eggplant parm once before but I LOVED it. I really need to make it again sometime soon. It's such a perfect meal.
