I'd say I'm about 90% back to my normal self. I still get twinges of the "icky" feeling, but not a constant "I'm gonna die", like I was Friday and most of yesterday. I'm really willing myself better, I hate feeling like this. Then again, I'm sure nobody does....
I went to bed early last night and got a good amount of sleep. Maybe around 10 hours?? I guess my body needed it. I woke up today bright and early around 7am. I wanted to sleep longer, but I was wide awake!
I started today with a hot cup of Bigelow Pomegranate Green Tea. You know you missed it! I definitely did. It reminds me of the colder weather. Even though today was absolutely beautiful, I'm quite aware that fall is upon us. I love the season, just not a fan of the one that follows it. I had another cup after this one with Rob (once he finally got his butt out of bed!).Now brace yourselves, I didn't feel like having oatmeal for breakfast! I know, its quite shocking. I was still feeling not so great this morning and just didn't have the energy/patients to make it (I do stove top everyday). I decided on toast with PB & J. It hit the spot :)
I used some Food for Life Ezekiel bread for the toast. I love this stuff, its so good for you and quite filling. I did some studying for my classes and then Rob and I headed to the grocery store. It must have been at the exact perfect time, because the place was mobbed! I know that you're thinking, its Sunday and it was the afternoon, of course its gonna be nuts. But I'm telling you, this place must have been giving something away, because there are never that many people there.
I came home and used some more Ezekiel bread. I made a grilled cheese (shredded Mexican blend) with tomato and avocado and a little bit of hot sauce. It was delicious! What a great combo! You must try....For a snack this afternoon I dug into the new hummus that I got. It was almost too pretty to mix up. But then I got over it. I ate it with some Kashi crackers. Maybe about 6 altogether?? This hummus was way good. If you like olives, you'd loooooooove this.
Dinner was an adventure. I'd been browning CookingLight.com when I came across some recipes for polenta. I haven't had the stuff in awhile, but I remembered loving the texture (kinda like a pasta??). I used this recipe for my inspiration.Basically I made traditional polenta, chilled it and then cut it into rounds. I seared them in a teeny bit of olive oil and some Parmesan/Romano cheese and layered with a tomato sauce.
For the sauce I just threw a can of diced tomatoes, a teeny can of tomato sauce, approx 1/4 cup red wine, Mrs. Dash seasoning (couldn't find fresh basil...grrr), and a sprinkle of cayenne pepper. I cooked until reduced by almost half.
For the plate, I simply layered the polenta rounds with the sauce and topped with some Parmesan/Romano cheese. Delish :) I had two rounds with sauce, as pictured.
There are lots and lots of leftover polenta. I'm quite excited for my lunch tomorrow. Its basically the same thing as tonight's dinner. Sorry to be so boring.
